  • Dried chilli flakes, 1/2 tsp.
  • Rice cooked (to serve)

The Marination

  • 1-tablespoon grated ginger
  • 1-tablespoon brown sugar
  • 2 tbsp soy sauce
  • Pepper and salt as desired

Method

  • The paneer should be poked with a toothpick a few times and then cut into bite-sized cubes.
  • All the marination components should be combined in a bowl.
  • Paneer should be added to the marinade and left for 10 to 15 minutes.
  • Half of the oil should be added to a pan and heated over a high temperature until it begins to smoke.
  • After that, add the ginger and stir for a few seconds. Add the spinach leaves to this and simmer for a further 1-2 minutes.
  • Add a little water to this mixture, and simmer for 2 minutes. Add more salt and pepper and move it to a platter once the leaves have begun to wilt and the stems have softened slightly (they should still have some crunch).
  • Then, add the remaining oil to the pan. Add the marinated paneer pieces and stir-fry them until they are evenly browned when the oil starts to smoke. Add the rest of the marinade. Bring the mixture to a boil, then lower the heat so that the gravy simmers and thickens. Toss in the spinach and chilli flakes after they have been added.
  • Serve warm alongside steaming rice.
